Spring Recipe: Citrus and Basil Fish

All you need are a few simply ingredients and a delicious cut of fish to make this easy spring dinner.

Ingredients:

  • 1 lbs white cod filets
  • 3 oranges
  • 1 lemon
  • ½ c. olive oil divided
  • Fresh basil
  • 2 TBSP unsalted butter
  • 1 TSP light brown sugar
  • Salt and black pepper to taste

Directions: REWRITE

  1. Pat fish dry with a paper towel and lay in a shallow cast-iron skillet.
  2. Wash and dry all produce. Zest, half, and juice the lemon and the orange.
  3. Top the fish with the lemon and orange zest.
  4. In a small bowl, combine the juices and 1/4 cup of olive oil. Whisk until thoroughly combined and pour over the fish. Allow to marinate for 30 minutes.
  5. Preheat oven to 250F.
  6. Remove the fish from the skillet and set aside. Pour the marinade from the skillet into a small bowl to save and heat a 1/4 cup of olive oil in the cast-iron skillet over medium heat.
  7. Add the fish to the pan and cook for 4 minutes per side, seasoning with salt and pepper.
  8. Place your skillet in the oven to keep warm.
  9. In a small pan, melt butter over medium-low heat. Add sugar, remaining marinade, the juice from the two oranges.
  10. Bring to a bowl, stirring constantly until thickened and reduced to create a sauce.
  11. Add 1/4 cup of finely shredded basil leaves–salt and pepper to taste.
  12. Remove the fish from the oven and plate. Pour the sauce over the fish and serve with a side of rice. Top with fresh basil and a slice of lemon.
